Artichokes are one of the oldest foods known to man. The heath benefits of them are great – and so perfect for juicing! They are high in Vitamin C and are said to help prevent the development of toxins in the liver. Artichokes have many health benefits, having said this, the taste can be quite bitter, so mixing them with other fruit and vegetables when juicing can help mask this flavour.

Artichokes are known to have high levels of phytonutrients, which are helpful in the treatment of various liver diseases and liver cancer. Artichokes are also beneficial in the digestion of food, and can also be beneficial for the symptoms of irritable bowel syndrome. Artichokes are also said to have very high levels of potassium – nearly as much as bananas, which is essential for our bodies to carry out necessary functions.

Vitamins A, B1, B2, B6, K, C, E, Niacin, Pantohenic Acid and Folate are found in artichokes. Also Postassium, Phosphorus and Magnesium are just some of the minerals that can be gained from them.
